Flax Apple Cinnamon Muffins

45 minutes Difficulty:


  • 2 cups of whole grain flour
  • 1 cup of ground flax seeds
  • 1 tablespoon of baking soda
  • 1 1/2 teaspoon of ground cinnamon
  • 1/2 cup of maple sugar
  • 1/4 cup of maple syrup
  • 2 cups of almond milk
  • 1 apple, peeled and diced
  • 1 tablespoon of ground chia seed
  • 3 tablespoons of water


Preheat the oven to 350° F.
In a large mixing bowl, mix the flour, flax, baking soda, and maple sugar together. In a separate mixing bowl combine the almond milk, maple syrup, chia seed, and diced apple. Slowly add the wet ingredients to the dry ingredients until clumps are removed. Once batter is ready, put cupcake liners into cupcake tin and fill liners 3/4ths of the way filled. Place in oven for about 30 to 35 minutes. When muffins are done, let cool for 20 to 25 minutes and enjoy!
