Pear with Lemon cheese & Cabernet Blueberries

Ingredients:

  • 4 ct Starkrimson Pears
  • 3 tbs Light Brown Sugar
  • 2 c Cottage Cheese
  • 1 tbs Lemon zest

 

Cabernet Blueberries:

  • 1 c Cabernet Sauvignon
  • 4 pt Fresh Blueberries, reserve 1 pt
  • 1/2 c Cane Sugar
  • 1/8 tsp Ground Clove

 

Method:

Preheat oven to 350 degrees.

In a large sauce pot boil 3 pt blueberries, wine, sugar and clove for 5-10 minutes. Reduce the heat and simmer for 25-35 minutes until the liquid has reduced to a paste like consistence. Next add the fresh blueberries to the pot and mix with the compote, set aside. Half each pear, length wise and remove the seeds and core. Coat the inside of each pear half with brown sugar. Heat a large non-stick skillet over medium heat until very hot. Add the pears sugar side down to the pan and caramelize for 4-5 minutes until dark brown in color. Flip the pears over and place the pears, still in the pan, in the oven for 10 -15 minutes until soft. Remove the pears from the pan and let cool. Using a fine sieve rinse and strain the cottage cheese to remove some of the liquid.  In a small mixing bowl mix together the lemon zest and the cottage cheese until incorporated. When the blueberry compote and pears are cooled to just warm, fill each pear with approximately 3-4 tbs of cottage cheese and top with a few tbs of blueberries.

Garnish with mint of more lemon zest. Serve and enjoy.
