Spinach Fettuccine Pasta

Ingredients

Pasta

  • 1/2 cup of spinach, strained, chopped, and sautéed
  • 2 brown eggs
  • 2 1/2 whole wheat flour
  • 2 tablespoons of olive oil
  • Spinach Juice
  • 1 cup of fresh spinach
  • 1/4 cup of water

Bechamel Sauce

  • 1/4 cup cashew
  • 1/2 cup of water
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of minced garlic
  • 2 tablespoons of olive oil
  • A few turns of fresh cracked pepper

Prep Work
Bechamel Sauce: In a blender, add cashew and water. Let side for 20 mins. Then add all ingredients until silky smooth. The blending will roughly take about 5 minutes. Then set aside.
Spinach Juice: Combine spinach and water into a blender and blend until smooth. When ready, strain liquid spinach through a cheese cloth or fine mess strainer. Set aside.

 

Method

Combine flour and salt in a pile on an open surface table or countertop. Make a well in the middle of the flour and crack both eggs into well. Begin to scramble eggs and slowly incorporate the flour into the eggs. While incorporating, also add the spinach. Keep scrambling and slowly adding flour until the mixture turns into a dough like state. Once you have all the flour mixed in, start to knead dough. When kneading the dough, make a well in the dough and slowly incorporate spinach juice. About a 1/4 cup at a time. After all spinach juice is combined in the dough, place dough in a mixing bowl, cover with saran wrap, and let rest for about a half an hour. When dough is about ready to be turned into pasta, have a pot of boiling water and a pot of ice water ready for when the pasta is cut.
On a lightly floured surface, knead dough for about 3 to 4 minutes. With a pasta machine or by hand roll dough out to desired thinness. Use machine or knife to cut into strips of desired width. After pasta is cut, toss pasta into the boiling water. Let pasta boil for 3 to 5 minutes. Once is cooked, strain pasta out of boiling water and junk in ice water to stop the cooking process. Strain pasta from ice water and toss with a tablespoon of olive oil and set aside for when ready to serve.
Take prepared sauce and pasta and place into a skillet. Heat both just to warm them up together and then plate and serve.
