Spicy Purple Cauliflower Tacos

Ingredients
- 1 c. Minced cauliflower
- 4 ct Flour tortillas,
- 12 ct Farm fresh eggs, scrabbled
- 1/2 tsp Chipotle powder
- 1/4 tsp Ground cumin
- 4 tbs Olive oil, divided
- 1 tsp Pink peppercorns
- salt and pepper to taste
- Garnish with Sriracha
Directions
Heat a non-stick pan with 2 tbs. olive until hot. Add the eggs and stir frequently until eggs are nearly all the way cooked. Remove from the heat. The eggs will continue to cook while still in the hot pan. Toast the tortillas and set aside. With the remaining olive oil sauté the cauliflower over medium heat. Stir in the seasonings and set aside. Build the tacos and garnish. Serve and enjoy.
