Roasted Sunchokes With Lemon Garlic Aioli

Ingredients

  • 2 lbs Sunchokes, Sliced 1/2 inch.
  • 2 tbs olive oil
  • 1 tsp Sea Salt
  • 2 tbs Minced Chives
  • 10 oz Firm tofu
  • 1/4 c. Olive oil
  • 1/2 tsp Sea Salt
  • 2 tsp Minced Garlic
  • 1/4 c Lemon Juice
  • 2 tbs Stone Ground Mustard

Directions

Pre-heat Oven to 425 degrees. Coat the sunchokes in olive oil and place them on a sheet pan. Roast them on each side for 8-10 minutes. Remove from oven and toss with salt and chives, for the aioli, Blend all ingredients until smooth and adjust salt to taste. Serve and enjoy.
