Roasted Poblano Lime Salsa

Ingredients:
- 3 roasted poblanos, seeded and diced
- 2 limes, juiced
- 1 clove of garlic
- 1 tsp minced white onion
- ¼ cup chopped cilantro.
- 1 avocado, pit removed.
- 2 tbs water
- ½ tsp salt
Directions:
Place poblanos, garlic, onion, cilantro, avocado and salt in a molcajete to be ground into a paste. After the paste is formed add the water and limejuice and continue to mash.
After desired consistence is reached serve with chips and sprinkle with cotija cheese.
