Roasted Mushroom Gravy

  • 1 lb. Portobello mushrooms
  • 2 cloves of garlic, minced
  • 2 tablespoon of chopped rosemary
  • 3 tablespoons of olive oil, additional for cooking
  • 3 tablespoons of soy sauce
  • ½ small chopped celery
  • ½ small chopped white onion
  • ¼ teaspoon of ground black pepper
  • ½ teaspoon of salt
  • 2 cups vegetable stock


Preheat oven to 450 degrees. Place the mushrooms on a sheet pan that is covered in foil and sprinkle with olive oil. Roast for 25-35 minutes. In a large sauce-pot heat a splash of olive oil until hot and add your celery, onions, rosemary, pepper corns, soy sauce and garlic. Cook until soft. Pour in the vegetable stock and add the roasted mushrooms. Boil for 10 -20 minutes and blend with a stick blender until smooth. Serve and enjoy with any side dish.
