Pesto Cheddar Grilled Cheese with Heirloom Tomatoes and Avocado
- 1 loaf of bread
- 10 slices of mild cheddar cheese
- 1 heirloom tomato, sliced
- 2 avocados, sliced
- 1/4 cup of pesto
- 3 tablespoons of butter
Preheat the oven to 350°F. Take two slices of bread and cover one side of each slice with butter.
In a medium sauté pan, on medium heat, place bread butter side down onto pan. Let sit for about 2 minutes or until buttered side of bread is browned. Cover a sheet pan with foil and lay a cooling rack onto the foil. Lay slices of bread onto rack and fold 1 piece of cheese on each piece of bread. Add slices of avocado and tomato. Place in the oven for about 5 to 8 minutes or until cheese has melted. Once ready, take tray out of the oven and add pesto to your sandwiches. Fold two pieces together and serve.
