Parsnip crisps with dill, garlic and Parmesan

  • 2 lbs. Parsnips
  • 3 tbs. Olive oil
  • ½ c. Parmesan Cheese
  • 2 tbs. Minced fresh dill
  • 1 tbs. Minced garlic
  • ½ tsp. Sea salt


Pre-heat the oven to 350 degrees. Rinse and peel the parsnips. Using the same peeler, shave thin ribbons along all sides until you reach the core.
Next, place the shaved parsnips in a large bowl and add the olive oil, garlic, Parmesan, dill and salt. Mix well by hand and then spread on a large sheet pan.
Place in the middle rack and bake for 15 minutes. Take them out of the oven, mix them and then place them back in the oven for an additional 10-15 minutes.
Take them out, let cool, adjust seasoning serve and enjoy.
