Parsnip Cakes with Chive Yogurt Dip

  • 2-3 ct large parsnips, shredded
  • 2 ct Fresh eggs
  • 1 tsp Paprika
  • ½ c Milk
  • 3 tbs Whole-wheat flour
  • ½ tsp Salt
  • 2 tbs Parmesan cheese
  • 3 tbs Olive oil, for cooking
Chive Yogurt Mix
    • ½ c Greek yogurt
    • ½ tsp Sea salt
    • 2 tbs Fresh chives
    • 2 tbs Milk

(Mix all ingredients for the chive yogurt together and refrigerate for 1 hour)


In a large mixing bowl add the shredded parsnip with the salt, flour, eggs, paprika, Parmesan cheese, milk and salt. Mix all of the ingredients together and form into small 2 oz. patties.
After all the cakes are formed, heat a nonstick pan with olive oil until hot. Turn down the heat to low-medium and cook the cakes on each side for 3-4 minutes or until golden brown.
Serve with chive yogurt and enjoy.
