Parisian Squash

  • 4 large yellow squash
  • ½ teaspoon of minced garlic
  • ¼ cup of Parmesan cheese
  • 3 tablespoons of unsalted butter
  • 2 tablespoons chopped parsley
  • Salt and pepper to taste


Rinse and dry each squash. Using a melon baller scoop out as many spheres as you can from all sides of the vegetable. After the 4 squash are done, heat a large pan over medium heat, add the butter and garlic and sauté the squash balls for 2-4 minutes until just tender.
Take them off the heat; add the cheese and parsley and season generously with salt and pepper.
Serve as a healthy side dish at your next dinner party.
