Kohlrabi Eggs with Salsa Verde

Ingredients
- 6 ct Kohlrabi, ends removed peeled and sliced
- 10 ct Eggs
- 3 Tbs Olive oil
- ½ c. Mozzarella cheese
- ¾ tsp sea salt
- Salsa Verde
- 3 Jalapeños, remove stem, veins, and seeds
- 3 Tomatillos
- 1 clove of garlic
- ¼ cup of diced white onions
- ½ teaspoon of salt
Directions:
In a large pot boil all ingredients for the salsa verde, excluding the salt, until soft, 3-5 minutes. Remove from heat, strain and blend on high until smooth.
Saute the kohlrabi in olive oil for 5 minutes until tender, add the eggs and mix. Cook over medium heat until eggs are almost fully cooked, 3-5 minutes. Stir in the cheese and salsa and serve immediately.
