Kohlrabi Eggs with Salsa Verde

  • 6 ct Kohlrabi, ends removed peeled and sliced
  • 10 ct Eggs
  • 3 Tbs Olive oil
  • ½ c. Mozzarella cheese
  • ¾ tsp sea salt
  • Salsa Verde
  • 3 Jalapeños, remove stem, veins, and seeds
  • 3 Tomatillos
  • 1 clove of garlic
  • ¼ cup of diced white onions
  • ½ teaspoon of salt


In a large pot boil all ingredients for the salsa verde, excluding the salt, until soft, 3-5 minutes. Remove from heat, strain and blend on high until smooth.
Saute the kohlrabi in olive oil for 5 minutes until tender, add the eggs and mix. Cook over medium heat until eggs are almost fully cooked, 3-5 minutes. Stir in the cheese and salsa and serve immediately.
