English Pea Parmesan Oats

  • 2 cups steal cut oats
  • 1 teaspoon minced garlic
  • 3 tablespoons coconut oil
  • 8 cups water
  • ½ teaspoon salt
  • 1 cup shelled English peas
  • ½ cup shredded parmesan cheese
  • ¼ cup chopped walnuts.


In a large pan that has a cover, heat coconut oil on medium and add the oats. Stir the oats so that they are all coated with the oil and toast for 5-7 minutes. Add the water and salt to the pan and bring to a slow boil for 25-35 minutes. Stir only once or twice to make sure the oats are cooking evenly and not sticking to the bottom of the pan. Cover and continue to cook on low for 30-45 minutes
In a large sauté pan add the garlic and peas with a splash of oil and cook for 2-4 minutes until the peas are tender. Add the walnuts and cheese along with the peas to the cooked oat and stir together. Save a little of the cheese and walnuts for garnish. Serve and Enjoy.
