Creamy Spinach Parmesan Penne

Ingredients:
- 2 cups fresh cooked spinach, minced
- 1/4 olive oil, divided
- 2 cloves of garlic minced
- 1-cup vegetable stock
- 1-cup heavy cream
- 1/2-cup pasta water
- 1 cup Parmesan cheese
- 1/2 tsp salt
- Fresh cracked pepper
Directions:
Boil pasta according to package. Reserve 1/2-cup pasta water. In a large skillet over medium heat, add olive oil, minced garlic and spinach, cook for 5-7 minutes. Add the chicken stock, heavy cream, salt and pepper. Heat until starts to simmer, turn off heat and slowly add the Parmesan cheese, stirring constantly. Add the pasta into the sauce. Garnish, serve and enjoy.
Chefs Notes: you can top with shredded Parmesan and broil the cheese for a nice depth of flavor and beautiful presentation.
