Chicken Garam Masala Couscous

  • 6 chicken thighs
  • 1 teaspoon of salt
  • 2 tablespoons of garam masala
  • 1 tablespoon of olive oil


  • 1 cup of dry couscous
  • 1 and 1/4 cup of water
  • 1/4 teaspoon of salt
  • 2 tablespoons of olive oil
  • 1 tomato seeded and diced
  • 1/4 cup of green onion, diced
  • 1/4 cup of toasted almonds


Preheat the oven to 450° F.
Marinate chicken in garam masala, olive oil, and salt. Place in oven for 45 minutes to an hour.
In a large sauté pan, heat (medium) 1 tablespoon of olive oil. Add couscous to the pan and stir for 30 seconds to a minute. Add water and let it boil for 5-8 minutes or until water has boiled down to the top of the couscous. Cover and reduce heat to low and continue to cook for 10-15 minutes. Then remove from heat and cover for an additional 5-8 minutes. Place couscous aside to cool to room temperature and then pour the couscous into a mixing bowl. Mix together the couscous, tomato, green onion, and almonds. Shred the chicken off the bone and add to the couscous mixture. Serve and enjoy!
