Baba Ghanoush
Ingredients
- 2 Eggplants peeled and diced
- 2 Cloves of garlic
- 2 Lemons, juiced
- 1/4 c. olive oil
- 1/4 c. Tahini sauce
- 1 tsp salt
- 1/4 c. water
- 1 tsp. cumin
- 1/2 tsp coriander
Directions
In a large pan, heat olive oil and garlic until bubbling. Add the cubes of eggplant and let cook over medium heat until soft, 8 to 10 minutes. Continue to cook until it forms a paste, stirring with a spoon.
Add seasonings, water, and lemon juice. Cook for another 10 to 15 minutes. Remove from heat and let cool. Blend all together in a blender, salt and pepper to taste.
Serve with grilled pita.
