Avocado Pasta Salad with Purple Cauliflower

Ingredients

  • 1 lbs cavatappi pasta
  • 1/2 c shredded spinach
  • 1/4 c sliced sun-dried tomatoes
  • 1 c chopped purple cauliflower
  • 1 c ciliegine mozzarella
Avocado Sauce
  • 3 ct ripe avocados
  • 2 ct lemons, juiced
  • 1 tsp salt
  • 1/2 c olive oil
  • 1 c water
  • 2 tsp minced garlic
  • 1/4 c chopped green onion

Directions

Heat a pot with salted water until boiling. Add dried pasta and cook for 8-10 minutes until dente, strain and let cool. In a blender add all the ingredients for the sauce and blend until smooth. Add the sauce to the cooled pasta along with the rest of the other ingredients and mix together. Serve and enjoy.
