Almond Madeleine Cookies

25 minutes Difficulty:


  • 2 whole brown eggs
  • a pinch of salt
  • 1 table of almond extract
  • 1/3 cup of granulated sugar
  • 2 tablespoons of lemon zest
  • 1/2 cup of whole white flour
  • 1/4 cup of coconut oil


Preheat the oven to 375°F. Brush the madeleine pan with a small amount of the coconut oil.
In a standard electric mixer add the eggs, salt, and almond extract. Whip mixture until they’re nice and light for about 2 minutes. Slowly add the sugar and continue to whip in, until pale white or until it reaches ribbon state. Gradually sift flour into mixture while being whipped. With mixer on low, slowly drizzle the coconut oil and lemon zest into the batter. Scoop batter into madeleine pan and place in the oven for 15 to 18 minutes.
Take out and let cool. Enjoy!
