Coconut Macaroons

Ingredients:

Macaroons

  • 5 cups of coconut, shredded
  • 3/4 cup of cane sugar
  • 1/4 cup of maple syrup
  • 1/4 cup of flour
  • 1 teaspoon of almond extract
  • 1/2 teaspoon of vanilla extract
  • 1/8 of a teaspoon of salt
  • 4 egg whites
  • 1 whole egg

Topping

  • 1 cup of dark chocolate chips, melted

Method:

Preheat oven 350° F.

In a large mixing bowl combine all ingredients until mixed evenly. Lay parchment paper on to cookie sheet and place about a 2 inch mound of macaroon batter. Cook for 20 to 25 minutes. Once done let cool for 5 to 10 minutes and drizzle chocolate over macaroons.

Refrigerate over night and serve.
