BBQ Quinoa Burgers with Sweet Red Cabbage Slaw & Sprouts

Ingredients:

 

Burger Ingredients
  • 3 c Cooked Quinoa
  • 2 c Cooked Chick peas
  • 4 Eggs
  • 2 c Unseasoned Bread Crumbs
  • 1/2 c BBQ sauce
  • 1/2 tsp Salt
Slaw Ingredients
  • 3 c Shredded Red Cabbage
  • 3c Shredded Green Cabbage
  • 1/2 c Chopped Cilantro
  • 1/4 c Sliced White onion
  • 2 tbs Apple cider vinegar
  • 1/2 c Greek Yogurt
  • 1 c Low Fat Mayo
  • 1/2 tsp Salt
  • 1/4 c Honey
Additional Ingredients
  • 1 c Sprouts
  • 1/2 c BBQ Sauce
  • 15 Slider Buns
  • ¼ c Olive Oil for cooking

Directions:

In a large mixing bowl, smash the chickpeas with a slotted spoon or by hand. When the chickpeas are mashed add the rest of the ingredients and mix for 2 minutes until fully combined.
While the burger mixture is setting, mix all of the ingredients for the slaw together until everything is incorporated. Refrigerate for 30 minutes.
Form the burgers into 3-4 oz patties, roughly 15 total. In a large sauté pan add 1/2 of the olive oil and cook each burger on each side for 3-5 minutes, or until the internal temperature reaches 165 degrees.
Warm the slider buns in the oven for a few minutes and slice in half. Place the patties on the bottom half, top with BBQ sauce, sprouts and slaw.
